On se souvient dans le chapitre d\u00e9di\u00e9 \u00e0 la chasse au gras que <strong>cette explosion des crises cardiaques \u00e9tait corr\u00e9l\u00e9e \u00e0 une augmentation de la consommation de sucres<\/strong>, et si on se penche sur le r\u00e9gime alimentaire des Am\u00e9ricains au cours du 20\u00e8 si\u00e8cle, on remarque qu&rsquo;ils furent <strong>de grands mangeurs de fruits<\/strong>, et beaucoup moins de l\u00e9gumes.<\/p>\n<p>Il s&rsquo;agissait de <strong>fruits tropicaux<\/strong> comme les bananes, les agrumes et l&rsquo;ananas, c&rsquo;est-\u00e0-dire des fruits de pays o\u00f9 \u00ab il fait toujours beau \u00bb, donc des fruits d&rsquo;\u00e9t\u00e9 <strong>tr\u00e8s riches en sucres<\/strong>, et notamment en <strong>fructose<\/strong>, <strong>un type de sucre que nous allons d\u00e9peindre dans ce chapitre.<\/strong><\/p>\n<p>Il y aurait donc corr\u00e9lation entre <strong>l&rsquo;augmentation des maladies m\u00e9taboliques en Am\u00e9rique<\/strong>, et plus globalement en Occident, <strong>et l&rsquo;augmentation de la consommation de fruits<\/strong>, et plus globalement de produits sucr\u00e9s et c\u00e9r\u00e9aliers.<\/p>\n<p>Certes, il y a \u00e9videmment d&rsquo;autres facteurs qui ont du rentrer en compte et le lien de cause \u00e0 effet n&rsquo;est pas \u00e9tabli, mais depuis, la science a montr\u00e9 que les fruits, en fonction de leur forme, de leur mode de consommation, du profil de l&rsquo;individu qui les consomme et de la quantit\u00e9 qui est consomm\u00e9e, <strong>ne sont pas bons dans tous les cas de figure pour pour la sant\u00e9 humaine<\/strong>. Il se pourrait m\u00eame que leur consommation au-del\u00e0 d&rsquo;un certain seuil, \u00e0 une certaine fr\u00e9quence, et en fonction des fruits choisis, puisse s&rsquo;av\u00e9rer toxique pour contenu d\u00e9di\u00e9 aux l\u00e9gumes phares de l&rsquo;alimentation m\u00e9diterran\u00e9enne<\/a> que certains v\u00e9g\u00e9taux consid\u00e9r\u00e9s comme des l\u00e9gumes sur le plan culinaire, sont en r\u00e9alit\u00e9 des fruits. On les classe alors dans la rubrique des l\u00e9gumes-fruits, comme par exemple les tomates, les avocats, les olives ou encore les aubergines.<\/p>\n<p>La raison pour laquelle ces aliments sont consid\u00e9r\u00e9s comme des fruits sur le plan botanique est q<strong>u&rsquo;ils contiennent en eux les graines de la plante<\/strong>. Cette caract\u00e9ristique fait de ces aliments des fruits, ind\u00e9pendamment de leur teneur plus ou moins \u00e9lev\u00e9e en sucre.<\/p>\n<p>En fait, le fruit est l&rsquo;organe comestible des plantes \u00e0 fleurs, et cet organe &#8211; par exemple l&rsquo;avocat ou l&rsquo;aubergine &#8211; succ\u00e8de \u00e0 la fleur et contient la ou les graines. Si on prend l&rsquo;avocat, il contient un noyau (donc une graine), et il provient d&rsquo;une fleur f\u00e9cond\u00e9e (celle de l&rsquo;avocatier). Il s&rsquo;agit donc d&rsquo;un fruit.<\/p>\n<p>Certaines exceptions existent, notamment la banane qui ne contient pas de graines, de noyaux ou de p\u00e9pins \u00e0 proprement parler, mais qui dispose bien d&#8217;embryons de graines en son sein, qui n&rsquo;ont pas besoin d&rsquo;\u00eatre f\u00e9cond\u00e9s. Le bananier domestiqu\u00e9 par l&rsquo;homme par s\u00e9lection g\u00e9n\u00e9tique, un processus dont on a d\u00e9j\u00e0 parl\u00e9 dans le chapitre d\u00e9di\u00e9 aux <a href=\"https:\/\/blooness.com\/zh\/regime-mediterraneen-cereales\/\">c\u00e9r\u00e9ales<\/a>, peut s&rsquo;auto-reproduire par lui-m\u00eame.<\/p>\n<p>Comme cette d\u00e9finition des fruits est purement botanique, on aura tendance ici \u00e0 pr\u00e9ciser quand on parle de <strong>fruits globalement sucr\u00e9s<\/strong>, comme les bananes, les fraises ou les oranges, ou de \u00ab\u00a0l\u00e9gumes-fruits\u00a0\u00bb, comme par exemple la tomate, l&rsquo;aubergine ou la courgette, beaucoup moins riches en sucres simples, comme nous l&rsquo;avions d\u00e9j\u00e0 expliqu\u00e9 dans <a href=\"https:\/\/blooness.com\/regime-mediterraneen-legumes\/\">le grand chapitre d\u00e9di\u00e9 aux l\u00e9gumes en di\u00e8te m\u00e9diterran\u00e9enne<\/a>. Enfin, une cat\u00e9gorie un peu \u00e0 part de fruits riches en <a href=\"https:\/\/blooness.com\/zh\/lipides\/\">lipides<\/a> concerne une minorit\u00e9 de fruits comme les olives ou la noix de coco par exemple, et nous avions \u00e9galement d\u00e9j\u00e0 trait\u00e9 ce type d&rsquo;aliments dans ce guide.<\/p>\n<p>La question ici est de savoir si les fruits sucr\u00e9s sont bons pour la sant\u00e9, dans quelle quantit\u00e9, et de savoir ce qu&rsquo;en dit la <a href=\"https:\/\/blooness.com\/zh\/diete-mediterraneenne\/\">di\u00e8te m\u00e9diterran\u00e9enne<\/a> \u00e0 ce sujet.<\/p>\n<h2 id=\"les-fruits-en-diete-mediterraneenne\">Les fruits en di\u00e8te m\u00e9diterran\u00e9enne<\/h2>\n<p>L&rsquo;observation du r\u00e9gime dit <a href=\"https:\/\/blooness.com\/zh\/diete-mediterraneenne\/\">m\u00e9diterran\u00e9en<\/a> sur les populations ayant brill\u00e9 par leur long\u00e9vit\u00e9 en bonne sant\u00e9 a permis de constater que <strong>les habitants de ces r\u00e9gions consommaient r\u00e9guli\u00e8rement des fruits et des l\u00e9gumes de bonne qualit\u00e9, bio, et cultiv\u00e9s dans des conditions optimales<\/strong>.<\/p>\n<p>Outre les divers l\u00e9gumes (et les l\u00e9gumes-fruits) qui constituent l&rsquo;un des piliers de l&rsquo;<a href=\"https:\/\/blooness.com\/zh\/diete-mediterraneenne\/\">alimentation m\u00e9diterran\u00e9enne<\/a> (poivron, courgette, tomate, fenouil, roquette, chou) mais aussi les herbes (persil, menthe, basilic) et bien s\u00fbr les <a href=\"https:\/\/blooness.com\/zh\/regime-mediterraneen-epices-condiments-aromates-liste\/\">aromates<\/a> et les <a href=\"https:\/\/blooness.com\/zh\/regime-mediterraneen-epices-condiments-aromates-liste\/\">\u00e9pices<\/a> qui comptent parmi les meilleurs aliments protecteurs pour la sant\u00e9 (ail, oignon), nous avons donc les fruits.<\/p>\n<p>La question reste de savoir <strong>quelle quantit\u00e9 et quelle priorit\u00e9 accorder aux fruits par rapport aux l\u00e9gumes<\/strong>. Car <strong>le probl\u00e8me de la pyramide alimentaire <a href=\"https:\/\/blooness.com\/zh\/diete-mediterraneenne\/\">m\u00e9diterran\u00e9enne<\/a><\/strong> telle qu&rsquo;on peut la voir partout, <strong>c&rsquo;est qu&rsquo;elle met sur le m\u00eame plan les l\u00e9gumes, les fruits, les c\u00e9r\u00e9ales, l&rsquo;huile d&rsquo;olive, les (bons) <a href=\"https:\/\/blooness.com\/zh\/regime-mediterraneen-oleagineux-benefices\/\">ol\u00e9agineux<\/a>, les <a href=\"https:\/\/blooness.com\/zh\/regime-mediterraneen-legumineuses\/\">l\u00e9gumineuses<\/a> et les herbes, \u00e9pices et aromates<\/strong>. souvent moins \u00e9nerg\u00e9tiques &#8211; ou m\u00eame avec des l\u00e9gumes d\u00e9pourvus de <a href=\"https:\/\/blooness.com\/zh\/glucides\/\">glucides<\/a> nets comme les brocolis, les choux ou la salade ?<\/li>\n<li>Quand le r\u00e9gime cr\u00e9tois parle de c\u00e9r\u00e9ales ou de l\u00e9gumineuses comme \u00e9tant \u00e0 la base de chaque repas, parle-t-on d&rsquo;une base comme \u00e9tant un pr\u00e9-requis qualitatif, c&rsquo;est-\u00e0-dire une pr\u00e9sence plus ou moins indispensable \u00e0 chaque repas mais possiblement en toute petite quantit\u00e9 si on le souhaite, ou est-ce que l&rsquo;on sugg\u00e8re qu&rsquo;ils doivent \u00eatre quantitativement dominants dans l&rsquo;assiette et dans l&rsquo;alimentation ?<\/li>\n<\/ul>\n<p>En fonction des r\u00e9ponses \u00e0 ces questions, les cons\u00e9quences ne seront pas exactement les m\u00eames sur le plan m\u00e9tabolique.<\/p>\n<p>D&rsquo;aucuns d\u00e9fenseurs de la di\u00e8te carnivore, c\u00e9tog\u00e8ne ou m\u00eame plus g\u00e9n\u00e9ralement \u00e9quilibr\u00e9e \u00e0 la m\u00e9diterran\u00e9enne soutiendront l&rsquo;id\u00e9e selon laquelle les fruits et les c\u00e9r\u00e9ales &#8211; surtout les fruits et les c\u00e9r\u00e9ales telles qu&rsquo;on les a actuellement en supermarch\u00e9, et qui s&rsquo;\u00e9loignent de plus en plus de leurs anc\u00eatres par le traitement de l&rsquo;homme &#8211; en d&rsquo;autres termes, tous les v\u00e9g\u00e9taux &#8211; doivent constituer la base de chaque repas<\/strong>, <strong>sans qu&rsquo;on sache quelle priorit\u00e9 accorder \u00e0 chacune de ces familles d&rsquo;aliments<\/strong>, et <strong>en les consid\u00e9rant tous comme \u00e9tant interchangeables, ce qui n&rsquo;est pas aussi simple<\/strong>, sinon, \u00e7a serait effectivement trop beau.<\/p>\n<p>Il ne s&rsquo;agit pas de bl\u00e2mer cette pyramide alimentaire, car comme nous l&rsquo;avons pr\u00e9cis\u00e9 juste avant, <strong>elle a le m\u00e9rite de remettre des aliments globalement sains sur le devant de la sc\u00e8ne<\/strong>, au d\u00e9triment des snacks sucr\u00e9s, sal\u00e9s, bourr\u00e9s de mauvaises <a href=\"https:\/\/blooness.com\/zh\/lipides\/\">graisses<\/a>, ou encore des apports prot\u00e9in\u00e9s parfois trop importants en regard de l&rsquo;activit\u00e9 physique des consommateurs et provenant en plus de viandes de mauvaise qualit\u00e9.<\/p>\n<p>Il s&rsquo;agit plut\u00f4t de pr\u00e9ciser, selon les informations disponibles en l&rsquo;\u00e9tat, <strong>ce que pourrait \u00eatre une alimentation m\u00e9diterran\u00e9enne optimale, moderne et adapt\u00e9e au monde d&rsquo;aujourd&rsquo;hui<\/strong>.<\/p>\n<p>Et <strong>la question des fruits<\/strong> &#8211; et dans une autre mesure des c\u00e9r\u00e9ales &#8211; <strong>fait partie de cette probl\u00e9matique<\/strong> assez complexe.<\/p>\n<p>Dans les faits, les fruits consomm\u00e9s dans la di\u00e8te m\u00e9diterran\u00e9enne sont g\u00e9n\u00e9ralement le raisin, les figues, les p\u00eaches, les fraises, le melon, les pommes, les poires, etc&#8230;
